Cheesy Ranch Hash Brown Casserole
4 C. frozen shredded hash browns, thawed
1 small onion, chopped
8 oz. water chestnuts, chopped
1 clove garlic, chopped
1 oz. pkt. dry ranch salad dressing mix
3 T. butter, melted
10.5 oz. can cream of mushroom soup
1 1/2 C. shredded cheddar cheese
1/4 tsp. pepper
1 C. french fried onions
Combine the first 5 ingredients in a bowl. Stir in the remaining ingredients, minus the french fried onions. Pour into a lightly greased 2 quart baking dish and bake in a 375 degree oven for 45 minutes. Remove and top with the french fried onions, return to the oven for 6-7 minutes until the onions are golden brown.
