Meatloaf Pie
Meatloaf Pie
2 lb. ground beef
1 sleeve crush ritz crackers
1 large egg, beaten
1 C. milk
1/3 C. finely chopped onion
1/2 C. ketchup
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
3 C. mashed potatoes, seasoned with butter, salt and pepper
In a bowl, combine the first 9 ingredients well. Press into the bottom of a 12" iron skillet. Bake in a 350 degree oven for 45 minutes. Remove and carefully drain off the excess grease. It will have shrunk some so scoot the meatloaf to the center and top with the mashed potatoes. Place back in the oven for 15 minutes. Pop under the broiler for a minute or two to brown up if desired. Serve with gravy or cheese sauce.
Cheese Sauce: 10.5 oz can cream of mushroom soup, 3/4 C. shredded cheddar cheese and 2 T. milk. Whisk together in a pot, cooking over medium high heat till warmed and creamy.
