Collards & Mustard Greens
1 bunch collard greens
1 bunch mustard greens
water
2 chicken bouillon cubes
1 smoked turkey wing or drumstick
1 tsp. red pepper flakes
salt and pepper to taste
Trim the washed collard and mustard greens from the stems and chop up the leaves. Place in a large pot and cover with water. Bring up to a boil and cook for 15 minutes. Reduce the heat to medium low and add the bouillon cubes, pepper flakes and turkey wing. Cover and cook for 1 1/2 hours or to your desired tenderness. Remove the turkey wing and pull off the meat, adding it back to the pot. Season with salt and pepper to taste. Serve or freeze in containers.
