Perfect Chocolate Cake With Butter Cream Icing
2 cups of sugar
1 3/4 cups flour
3/4 cup of cocoa
1 1/2 teaspoons of baking powder
1 1/2 teaspoons baking soda
1 teaspoon of salt
2 eggs
1 cup of milk
1/2 cup oil
2 teaspoons of vanilla
1 cup of boiling water
Preheat oven to 350. Grease and flour two 9” round cake pans. Combine sugar, flour, cocoa, baking powder, baking soda, salt in a bowl and stir. Add in eggs, milk, oil and vanilla and beat on medium speed for 2 minutes. Pour in boiling water. Batter will be thin. Pour into cake pans. Bake 30-35 minutes or until toothpick inserted in the middle comes out clean.
Butter Cream Icing
Ingredients:
2lbs of powdered sugar
1/2 cup or one stick of butter
1 1/2 cups veg shortning
2 tablespoons clear vanilla extract
1/3 cup water
Cream butter, shortening and vanilla until smooth. Add powdered sugar and water gradually. Mix thoroughly on low speed and do not over mix!
Spread on cake
