Strawberry Cobbler
Strawberry Cobbler
32 oz Strawberries, rinsed, dried and cut in half or quarters depending on size (making sure to cut off stem)
2/3 cup sugar
2 tablespoons corn starch
1/2 teaspoon salt
Crust
2 cups all purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
10 tablespoons butter, cut into small pieces
3/2 cup half & half (or heavy cream or buttermilk)
2 teaspoons vanilla bean paste (or vanilla extract)
1 -2 tablespoons granulated sugar)
Preheat oven to 400
Spray a 9x13 baking dish with nonstick spray, set aside
In a large bowl combine cut strawberries, sugar, cornstarch and salt until strawberries are evenly coated
Place strawberry mixture into prepared pan in an even layer
In a large bowl (I used the same one as I used for the strawberries) whisk together flour, sugar, baking powder, baking soda & salt
Cut in butter using a pastry cutter, 2 knives, or your fingers until butter is the size of peas
In a measuring cup whisk together half & half and vanilla
Pour half & half mixture into flour & butter mixture, stirring until just combined, making to sure to not over mix
Place dough onto strawberries spreading it out as much as you can
Place into oven and bake for 20-24 minutes or until biscuits are browned and cooked through, and filling is bubbly
Remove and let cool for 20 minutes before serving
