Smothered Chicken
Smothered Chicken
4 boneless grilled chicken breasts
1/2 green bell pepper sliced
1/2 red bell pepper sliced
1 1/2 cups sliced button mushrooms
1 /3 cup yellow onion sliced
2 garlic cloves minced
1 teaspoon Italian seasoning
1 teaspoon dried basil
Salt and pepper to taste
1 tablespoon Dijon mustard
1 tablespoon Mayonnaise
1/2 cup Mozzarella cheese
2 tablespoons olive oil
4 slices bacon or more
Preheat oven to 350 degrees
Heat olive oil in a pan and add mushrooms, onions, red and green peppers. Saute until just soft then add seasonings , garlic and salt and pepper.
Place chicken breasts in a glass or ceramic dish to fit chicken. I used a 5 x 7 dish.
Mix Dijon and mayonnaise together and spread on chicken.
Spread veggie mix over chicken and top with Mozzarella cheese.
Cook about 15 minutes or until cheese has melted.
Top with crumbled bacon
