Tender Fried Chicken Gizzards
1 lb. chicken gizzards
4 C. water
1 rib celery
1 tsp. salt
1 tsp. apple cider vinegar
1 large egg
1/2 C. all purpose flour
1/4 tsp. pepper
good pinch of salt
veg. oil for frying
Put the gizzards in a pot, cover with the water and add the celery, salt and vinegar. Bring up to a boil, reduce to medium heat and let cook for 45 minutes. Drain and rinse under cool water so you can handle them. Beat the egg in a bowl then combine the flour, salt and pepper in another. Heat 1/4" oil in a skillet over med. high heat. Dredge each gizzard in the egg then into the flour and then fry them till golden, about 2-3 minutes. Drain on a paper towel lined plate.
