Orange Honey Garlic Chicken
2 1/2 lbs. chicken tenders, cut into bite size pieces
1/3 C. cornstarch
2 T. vegetable oil
1 T. butter
1 bunch asparagus, woody ends trimmed away and sliced
3 T. orange juice
3 T. soy sauce
1/2 C. chicken broth
1 tsp. sesame oil, optional
5 T. honey
4 cloves garlic, minced
1/2 tsp. ground ginger
1/4 tsp. pepper
1/4 tsp. red pepper flakes
Cooked rice for serving
Put the chicken in a ziploc bag along with the cornstarch. Seal, shake to coat and place in the fridge for 30 minutes to an hour. Heat the veg. oil in a large skillet over med. high heat. Dump in the chicken, breaking it apart with a wooden spoon, and fry till it becomes light golden in color. Remove to a plate. Add the butter to the pan along with the asparagus, cook for 2 minutes. Meanwhile, whisk together the remaining ingredients. Pour over the asparagus and bring up to a boil. Reduce the heat to medium and toss in the chicken. Cook, stirring often for 12 minutes. Serve with the rice.
