Sweet N' Spicy Green Beans

Sweet N' Spicy Green Beans 1 lb. fresh green beans, thin ones not thick 1 med. size bell pepper, sliced 1 small onion, sliced 2 T. brown sugar 1 T. soy sauce good pinch red pepper flakes black pepper to taste 1 tsp. veg. or olive oil Snip the ends of the beans, bring a pot of water to a boil (enough to hold the beans). Add the beans to the water and blanch for 6-8 minutes or until crisp tender (you don't want them soft). Remove the beans to a bowl filled with cold water then dry completely with a clean kitchen towel. Meanwhile, heat the oil in a large skillet over med. high heat. Add the bell pepper and onions, cook for 1 minute and add the beans. Toss to coat in the oil and then let them just sit there for a minute or two. Toss in the red pepper flakes and then toss the beans. The beans should begin to blister a little. After 3-4 minutes in the pan, tossing occasionally, and the onion and peppers are a little softened, remove from the heat. Whisk together the brown sugar and soy sauce and pour over the beans in the pan. Toss to coat well and season with black pepper before serving.
