Chicken a la King
Chicken a la King
3 C. uncooked chicken cubed (white or dark meat)
1 tsp. my house seasoning (equal parts garlic powder, onion powder and black pepper. Combine and store in an airtight container.)
1/2 tsp. Adobo
1/2 tsp. oregano
1/2 tsp. basil
1/4 tsp. dill weed
1/4 tsp. salt
Place the chicken in a large bowl and add in all the seasonings. Stir to combine, cover and put in the fridge for 30 min. to 1 hour.
1 T. butter
1 tsp. olive oil
1 stalk celery, small chopped
1 carrot, peeled and small chopped
1 small onion, chopped
1/4 C. frozen whole kernel corn
1/4 C. frozen sweet peas
10.5 oz. can cream of chicken soup
1/2 soup can milk (using the empty soup can to measure)
Heat the butter and oil over med. high heat, add the chicken and cook for 5 minutes. Add in the celery, carrot and onion. Stir and cook for 10-12 minutes or until chicken is cooked through. Reduce the heat to medium and stir in the frozen peas and carrots, cook for a couple of minutes then combine the soup and milk together and pour over the chicken and veggies. Stir to combine, cover and cook for 5-6 minutes. Serve over puff pastry cups as I did or over thick toast or hot biscuits.
