Jicama Salad
Jicama Salad
1 red bell paper, sliced matchstick size
1 yellow bell pepper, sliced matchstick size
2 large carrots, sliced matchstick size
1 medium red onion, sliced matchstick size
1 medium size jicama, peeled and sliced matchstick size
1 apple (your favorite kind) cored and sliced matchstick size, Save this step for last just before you toss with the dressing.
Combine both peppers, carrots and jicama in a salad bowl. Cover with a wet paper towel, set aside. Place the onion in a separate bowl. Prepare the dressing...
Vinaigrette
1/4 C. seasoned rice vinegar
1/2 C. olive oil
2 tsp. sugar
Whisk all ingredients together.
To assemble...
Place the onion in with the vinaigrette and let sit for 5 minutes (cooks the onion just enough to tame the flavor). After 5 minutes toss in the remaining veggies and again, let sit for 5 minutes. Toss in the apple and serve.
