Fried Salmon Patties

Fried Salmon Patties 2, 5 oz. cans boneless pink salmon 1 egg 1/4 all purpose flour (maybe a tad more) 1/2 tsp. salt 1/4 tsp. black pepper 1 green onion, chopped (optional) vegetable oil for frying Drain the salmon and break it apart in a bowl, add the egg, green onion, salt and pepper and mix well. Sprinkle in the flour, stir well. Add a little more flour if needed, don't get it to stiff. Heat 1" of oil over medium high heat in a large skillet. Drop salmon mixture by spoonfuls in the in the hot oil and fry for 2-3 minutes per side or until golden brown. Drain on a paper towel lined plate
