Eggnog Crumble Muffins
Eggnog Crumble Muffins
2 cups flour
1 cup sugar
1 Tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 cup eggnog
2 eggs
1/2 cup oil
1/2 cup white chocolate chips
For the Crumble topping
1/2 cup oatmeal
1/4 cup brown sugar
1/2 teaspoon nutmeg
2 Tablespoons melted butter
1 Tablespoons flour
Sift the dry ingredients together in a bowl. Whisk the eggnog, eggs, and oil in another bowl.
Pour the eggnog mixture into the flour and stir until combined. Stir in the white chips. Fill liners 2/3 full.
Stir together the crumble ingredients until well combined. Sprinkle each muffins with topping. Bake at 350 degrees for 20 minutes or until tops spring back when touched. Makes 16 muffins.
