Chocolate Chip Butter Cookies
Yield: 2-3 dozen
1 c unsalted butter
1-1/2 tsp pure vanilla extract
2 c all-purpose flour
1/8 tsp Kosher salt
1 c Confectioners' sugar
3/4 c mini chocolate chips
1/2 c sprinkles or jimmies
Melt the butter in a saucepan. Stir in the vanilla extract and cool slightly. Whisk together the flour, salt and Confectioners' sugar in a large mixing bowl. Add the butter mixture and mix well. Stir in the chocolate chips and sprinkles. The mixture will be crumbly, but will come together when pressed.
Shape the dough into 1-inch balls and place 2 inches apart on an uncreased cookie sheet. Flatten each ball with the bottom of a glass and bake at 350 degrees for 8 to 10 minutes, or until golden brown in color. Cool on a wire rack before serving.
