FLUFFY WAFFLE IRON OMELET
FLUFFY WAFFLE IRON OMELET
3 eggs (can sub with 6 egg whites)
Small Splash of milk
Cooking Spray
toppings of your choice (Red peppers, Mushrooms, bell peppers, Jalapenos, spinach, bell pepper, onions, crumbled bacon, sausage, salmon, fresh basil, etc. possibilities are endless)
grated cheese of your choice (cheddar, parmesan, swiss, etc)
Mix eggs with your choice of toppings. Heat waffle iron. Pour enough of egg mixture to cover bottom of waffle iron (they will puff up as they are cooking). Close top of waffle iron and cook about 2 minutes. Gently remove with fork or spatula.
Add a little more cheese and tomatoes if you wish and then fold over and sprinkle with grated cheese! This will make about 3-4 omelets depending on the amount of toppings you mix in. What is so great about this omelet is that it is light and fluffy the way a omelet should be.
