Pear and Apple Cobbler
2 pears
3 apples (I used golden delicious)
1/4 C. apple juice
1 T. brown sugar
1 1/4 C. white sugar
1 tsp. cornstarch
1/2 tsp. cinnamon
1 stick of butter
1 C. self rising flour
1 tsp. baking powder
1 C. whole milk
Peel and chop up the pears and apples into bite size pieces. Place the fruit in a med. size pot over med. high heat. Add in the apple juice, brown sugar, 1/4 C. white sugar, cornstarch and cinnamon. Stir to combine and bring to a boil. Reduce the heat to medium and continue cooking until it begins to thicken (6-8 minutes). Remove from heat, set aside. Place the stick of butter in a 9x9 baking dish and put in the oven as it is preheating to 350 degrees. Meanwhile, whisk together the flour, remaining sugar, baking powder and milk. Once the butter has melted, remove the baking dish and pour in the batter all over the pan. Top the batter with dollops of the fruit mixture all over. DO NOT STIR. Return to the oven and bake for 20-25 minutes or until golden brown.
