Sweet Potato Cake
Sweet Potato Cake
1 pkg yellow cake mix ( i use the pudding in the mix one)
4 large eggs
3/4 c sugar
I/2 tsp ground nutmeg
1 tsp cinnamon, ground
1 tsp pumpkin pie spices
1/4 c water, cold
1/2 c Wesson cooking oil
1 c mashed sweet potatoes (fresh or canned)
Mix ingredients well.Bake at 350*degrees for 1 hour and 15 minutes in a well-greased tube pan.Bake only 35 minutes if using layer pans.
Frosting
1 cup coconut milk
3 Tbsps whole wheat flour
1 cup pecans
1 cup powdered sugar
1 cup butter
1 tsp. vanilla extract
Place milk and flour in a saucepan and use a whisk to blend well. Cook over medium heat until it thickens stirring constantly. Remove from heat and allow to cool thoroughly.
Place sugar, butter and vanilla extract in mixing bowl and mix well with electric mixer. Add flour mixture and mix well.
Stir in coconut and pecans.
