One Pot Mexican Taco Filling
4 Tablespoons of vegetable or canola oil, divided
1 pound lean ground beef
1/2 cup onion {yellow or white}
2 teaspoons diced garlic
1 package taco seasoning or 2 Tablespoons of homemade Taco Seasoning
1 1/2 cups uncooked rice {I prefer Jasmine}
2 cans of chicken broth
1 (14.5 ounce) Jar of salsa {any, pick your favorite}
1 can corn, drained
1 can black beans, drained and rinsed.
1 package tortillas {we prefer flour}
Cheddar Cheese {optional topping}
1 avocado, peeled and diced {optional topping}
Green Onion, diced {optional topping}
Cilantro, diced {optional topping}
Roma Tomato, diced {optional topping}
In a large pot, add 2 Tablespoons oil, ground beef, onion, garlic and taco seasoning. Cook until ground beef is cooked through and onion is translucent.
Push ground beef mixture to the side of the pot and add 2 Tablespoons of oil and uncooked rice. Fry rice until it begins to golden.
Add to ground beef and rice mixture chicken broth, salsa, corn and black beans. Bring to a boil.
Put lid on pot and lower temperature to low and cook for 20 minutes or until rice is cooked through and liquids are absorbed.
Serve immediately. Fill tortilla with rice mixture and top with optional toppings
