Sweet and Smoky Chicken
1 cut-up chicken
1 onion, sliced thinly
hickory smoke salt / pepper
1/2 water
Sprinkle chicken pieces with hickory smoked salt. If you cannot find hickory smoked salt you can make your own! Instructions are here.
Pour water in the bottom of pan, add chicken. Cover with sliced onions and cover with a lid.
Bake at 350 for 1/2 hour.
In a small bowl, mix together the following (Debbie says she usually doubles it)
1/2 c vinegar
1/2 c maple syrup
1/2 c ketchup
2 tbsp mustard
Pour sauce over the chicken and return to the oven to finish baking.
Serve over rice.
