{No Bake} Sugar Cookie Balls
{No Bake} Sugar Cookie Balls
1/4 cup rice krispies
1/4 cup old fashioned oats
1/4 cup + 2 tablespoons Betty Crocker Sugar Cookie Cookie Mix*
1 tbsp butter
1/4 cup creamy peanut butter**
Optional: Sprinkles, pinch of salt (if your peanut butter doesn't have salt I recommend adding some)
Combine the peanut butter and butter in a small microwave-safe bowl and microwave for 20-30 seconds.
Combine the rice krispies, oats, and sugar cookie mix in a medium sized bowl.
Pour the peanut butter and butter mixture over the rice krispie mixture and mix until well combined.
Add sprinkles and a pinch of salt if desired.
Grab bits of the mixture and squeeze to form balls and then roll in your hands to get a more round shape.
If desired, roll the balls into some of the leftover sugar cookie mix.
Store in an airtight container on the counter or in the fridge. You can also try freezing these-I think they make a great frozen treat when thawed for a few minutes before eating.
Recipe Notes
*I used a Betty Crocker Snack Size Sugar Cookie Mix. I found it for $1 at Walmart. And you will have leftovers so you could easily double this recipe or save the rest for another batch of these bites.
**I have not experimented with natural peanut butters and cannot vouch for the taste or work-ability in this recipe.
