Crock Pot Beef Vegetable Soup
2 lbs of ground beef (I've used ground turkey for healthier version)
2 large cans of V8 Vegetable Juice
1 bag of frozen vegetables
1 large can of diced tomatoes
1 large onion (chopped)
1 teaspoon of garlic powder
1 bay leaf
Brown ground beef with onion and garlic powder until completely cooked. Drain excess fat. In a large crock pot, add all ingredients. Cook on low for 4 - 6 hours. Remove bay leaf before serving
