GLAZED SWEET POTATOES
GLAZED SWEET POTATOES
2 large sweet potatoes, peeled and diced into 1" cubes
3 tablespoons butter
3 tablespoons brown sugar
3 tablespoons maple syrup
1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
Preheat oven to 400 degrees F.
Melt butter in oven-safe skillet (preferably iron) over medium-high heat. Add sweet potatoes, and stir to coat. Add remaining ingredients, and stir until brown sugar is dissolved. Bring to a simmer, then transfer uncovered skillet to preheated oven.
Bake for 15-20 minutes, stirring every 5 minutes or so, until potatoes are tender.
