Grilled Beef with Garlic
3 lbs. beef tenderloin, cut in 1 inch squares
4 large garlic cloves, chopped
4 large bay leaves, crumbled
1/3 cup unsalted butter, melted
1 Tbsp. olive oil
1/2 tsp. freshly ground black pepper
1/2 tsp. salt
Mix all ingredients in shallow dish; toss well. Let stand at room temperature for 2 hours, tossing occasionally. If you like, marinate for 24 hours in refrigerator, then let stand 2 hours at room temperature. The flavor will be richer. Thread beef on 6 long metal skewers; heat marinade to 2 3 minutes, brush lightly over meat and then broil on outdoor grill or in broiler.
