Cinnamon Peanut Brittle
1 c. sugar
1/2 c. light corn syrup
2 c. salted peanuts
1 t. butter
1/2 t. cinnamon
1 t. baking soda
1 t. vanilla extract
Combine sugar and corn syrup in a 2-quart microwave-safe glass container. Cook, uncovered, on high for 4 minutes; stir. Heat 3 minutes longer; stir in peanuts, butter and cinnamon. Cook, uncovered, on high for 30 to 60 seconds or until mixture turns a light amber color. Mixture will be very hot.
Quickly stir in baking soda and vanilla until light and foamy. Immediately pour into a greased baking sheet and spread with a metal spatula. Refrigerate for 20 minutes or until firm; break into pieces. Store in an
airtight container.
