KOREAN SLAW TACOS
KOREAN SLAW TACOS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2 tbs rice vinegar
1/2 tsp crushed red pepper flakes
2 tbs + 2 tsp soy sauce
1/2 cabbage, cored, sliced
1 carrot, cut into matchsticks
2 tbs brown sugar
2 cloves garlic, chopped
1 tbs grated ginger
1 pound ground beef
1 tbs oil
1 onion, chopped
8 flour tortillas, warmed
In bowl, whisk together vinegar, pepper flakes, and 2 tsp soy sauce. Add cabbage and carrot, toss. Let sit 15 min. In a second bowl, combine sugar, garlic, ginger, and remaining soy sauce. Add beef, mix. Heat oil in a skillet. Add onion, cook until tender. Add beef mixture, cook until cooked through. Fill tortillas with beef, top with slaw. SERVE & ENJOY
