Easy Coconut Macaroon Pie
2 eggs
1 1/2 cups sugar
1/2 tsp
1 1/2 cups sweetened shredded coconut
6 Tbs butter at room temperature
1/2 cup milk
1/4 cup all-purpose flour
Pastry for a 9-inch pie crust
Beat the eggs, sugar, and salt in a mixing bowl until smooth.
In a separate bowl combine the coconut, butter, milk, and flour,
stirring to combine thoroughly. Stir the coconut mixture into
the egg mixture and pour into the pie crust. Bake in a preheated
325 oven for 1 hour. Cool fully in order for the pie to
set up. Makes 1 pie to serve 6 to 8.
