Taco Soup
Taco Soup
25 - 1 cup servings
2 pounds ground beef or cooked shredded chicken breasts
1 15 oz cans kernel corn (undrained)
2 15 oz cans pinto beans (undrained)
1 can black eye peas or black beans
2 15 oz cans stewed tomatoes or Diced Tomatoes
1 can hot or mild Rotel Style Tomatoes some times I use 2 cans, It’s up to you
1 package taco seasoning mix
1 package Liptons Onion Soup
1 chopped onion
Cheese for garnishment
Brown meat, onions and bell pepper. Drain.
Pour all ingredients into large pot and heat over medium to low heat on stove top for one hour. Water maybe added if the consistency is too thick.
You can top it off with sour cream or cheese on top. With tortilla chips or crackers I like cornbread with mine..
You also can use chopped jalapeno pepper if you like it real hot.
** This soup works well with most of the beans. Kidneys bean, Black beans**
