MEDITERRANEAN CHICKEN
MEDITERRANEAN CHICKEN
4-6 large chicken breasts, cut into 1" cubes
1.25 cups feta cheese, crumbled (1/2 block)
6 cups cooked brown rice
1 10 oz pks frozen spinach, thawed & squeezed of excess liquid
1 28 oz can diced tomatoes (basil)
1/4 cup sun dried tomatoes, finely chopped
5 cloves garlic, pressed
1.5 Tbsp olive oil
.25 cup grated romano cheese
seasoning to taste -- salt, pepper, basil, oregano
Put olive oil in cold skillet. Turn on heat to medium. When softens slightly, add chicken pieces. Cook 3 min (turn to low if using precooked chicken). Add can of tomatoes, turn heat on low, cover & simmer for 5 minutes. Add everything else EXCEPT cheese. Stir. Put in casserole dish, sprinkle with cheese, put in oven. Bake until cheese is browned.
