Pork & Potatoes Skillet
Pork & Potatoes Skillet
3 T. bacon grease
1 1/2 lb. whole pork loin, cut into cubes
5 russet potatoes, peeled and chopped
1 large onion, chopped
1/3 C. chicken broth
1 T. my house seasoning (equal parts garlic powder, onion powder and pepper...combine and store in an airtight container)
1 tsp. smoked paprika
salt to taste
Heat 1 T. of bacon grease in a large skillet over med. high heat. Add the cubed pork, cook through and lightly brown. Remove to a plate. Add the remaining bacon grease and potatoes, cook for 8 minutes, stirring often. Reduce the heat to medium and add the onion and broth and cook till the potatoes are tender and golden. Add the pork back to the skillet along with the seasonings. Stir to coat and cook for 1-2 minutes to warm the meat.
