Crock Pot Lima Bean Soup
Crock Pot Lima Bean Soup
32 oz. chicken broth
12 oz. bag frozen baby lima beans
2 carrots, diced
2 ribs celery, diced
2 potatoes, peeled and cut into bite size pieces
1/3 C. diced green bell pepper
1 small onion finely chopped
1 clove garlic, minced
3 T. salted butter
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. oregano
1/2 C. half and half
couple good squirts of ketchup
Put everything but the half and half and ketchup in your crock pot. Cover and cook on high for 3 hours. During the last 15 minutes stir in the half and half and ketchup. Season with additional salt and pepper to taste.
