Air Fryer Egg Rolls (makes 10)
2 T. butter
1 tsp. sesame oil
14 oz. pkg. coleslaw mix
5 green onions, chopped
1/2 T. soy sauce (or to taste)
1/4 tsp. ground ginger
10 egg rolls wrappers
Heat the butter and oil over med. high heat. Add the coleslaw mix and cook, tossing, for 5 minutes. Add the green onions and cook for 1 more minute, remove from the heat and stir in the soy sauce and ground ginger. Take an egg roll wrapper and lay it out as a diamond in front of you, wet the edges with water and add about 2 good tablespoons of the filling to the center, fold up like a letter and seal. Once all are filled place egg rolls in an even layer in your air fryer, working in batches. Spritz them with a little olive oil. Air fry at 370 degrees for 5 minutes. Turn them over and spritz again, cook an additional 4 minutes. NOTE: If you would like to freeze them, place in a single layer, uncooked, on a baking sheet and put in the freezer. Once frozen place in a freezer bag. To cook, just place in your air fryer following the directions above, adding 2-3 minutes to the cooking time if not thawed.
