PINEAPPLE CRISP

PINEAPPLE CRISP 1 medium pineapple cored and diced 1 tablespoon lime juice (about 1/2 a medium lime) 2 tablespoons cornstarch 1/2 cup white granulated sugar 2 tablespoons melted butter Topping 1 and 1/2 cup old fashioned oats 1 cup sweetened shredded coconut pinch of salt 6 tablespoons melted butter Preheat the oven to 425 degrees Add the diced pineapple to an 8x8 baking dish. Add the lime juice, cornstarch, sugar and melted butter. Stir to combine. In a small mixing bowl add the oats, shredded coconut, salt, and melted butter. Stir until the mixture is combined. Spoon on top of the pineapple. Place the baking dish in the preheated oven, bake about 10-15 minutes. Once the coconut is toasted on top remove from the oven and allow to cool for several minutes. Spoon into bowls and serve warm. Top with ice cream or a coconut gelato or flavored ice cream to keep with the tropical taste!
