Spanish Scramble
Spanish Scramble
8 eggs
1/2 C sour cream
1/2 C cottage cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp taco seasoning
1 Tbsp flour
1/2 tsp cumin
1 1/2 C grated cheddar cheese
1 small can green chilies
Put everything but cheese and chilies into blender and blend until white and fluffy
Pour into pan and fry like scrambled eggs
Put into 8 x 8 baking dish
Cover with cheese and chilies
Bake at 400 degrees for 12 minutes
Sprinkle with crushed tortilla chips right before serving
