S’more Cookies

S’more Cookies Yields 36 cookies 1 1/2 cups all-purpose flour 1 1/2 cups, crushed graham crackers 1/4 teaspoon baking powder 1/2 teaspoon salt 1/2 cup butter 1 cup brown sugar 1/2 cup sugar 2 teaspoons vanilla extract 2 large eggs 1 cup semi sweet chocolate chips 2 1/2 cups of miniature marshmallows 2 bars large HERSHEY Bars, broken into little pieces Preheat oven to 350 Line cookie sheets with parchment paper, set aside In a large bowl whisk together flour, graham crackers, baking powder & salt , set aside In the bowl of a stand mixer cream together butter, and both sugars until light, about 5 minutes Add in vanilla and eggs, and mix until just combined, scraping down the sides as needed Add flour mixture in 3 parts to the butter mixture, mixing until just combined Stir in chocolate chips Using a small cookie school place mounds of dough onto prepared cookie sheet Gently press each mound down with you hand Place into oven and bake for 8 minutes Remove from oven and QUICKLY press in 3-4 marshmallows and 2-3 chocolate pieces into cookies Place back into oven and continue cooking for another 3-4 minutes or until marshmallows are just browned Remove from oven and let cool on cookie sheet for 5 minutes before moving to a cooling rack to cool completely
