Shrimp Jambalaya
Shrimp Jambalaya
1 pound skinless chicken thighs, cut into pieces
2 stalks of celery
1 med green pepper chopped
1 med onion chopped
2 cloves of garlic, chopped
1 (28 oz) can of crushed tomatoes and liquid
1/2 teaspoon of salt
1/4 teaspoon cayenne pepper
1 cup uncooked orzo pasta
1 pound cooked shrimp peeled and deveined
In slow cooker, mix chicken, celery, and green pepper. Onion and garlic, tomatoes with liquid and seasonings. Cover and cook on low 7 to 9 hours.
Stir in orzo and increase heat to high cook 15 minutes until orzo is tender. Stir in shrimp and cook 2 minutes until shrimp is heated through.
