EASY OVEN BAKED TACOS
1 pound ground chicken or turkey
1/2 onion, diced
1 packet low-sodium taco seasoning mix, (or make your own)
1/4 cup red salsa
10 crunchy taco shells
15 ounces canned refried beans
1 cup grated Mexican blend cheese
optional toppings: shredded cabbage, salsa, sour cream, diced tomatoes
Preheat oven to 400 degrees F.
Brown and crumble ground meat with onions over medium high heat. When meat is starting to brown, sprinkle taco seasoning over meat. Add salsa and stir to combine. (If you are using over a pound of meat, you may want to add a couple extra tablespoons of salsa or water.) Reduce heat to medium and saute until cooked through.
While meat is cooking, spread refried beans into the bottom of each taco shell. Arrange bean-filled shells, standing up, in a square or 9 x 13" baking dish sprayed with cooking spray. (This is important because it makes cleanup super easy.)
When meat is cooked through, spoon into taco shells until almost full. Sprinkle a layer of cheese into each taco.
Place tacos into preheated oven and bake for 10 minutes, or until cheese is melted. Serve with assorted toppings and enjoy.
