ROASTED SWEET POTATOES

ROASTED SWEET POTATOES 3 large sweet potatoes. (cut into small cubes) 1/2 cup olive oil. 1/4 softened butter. 1 tablespoon brown sugar. 1 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground ginger. salt to taste. Preheat oven to 350 degrees and lightly spray a small baking dish with cooking spray and place diced sweet potatoes in the dish. Melt butter in the microwave, add cinnamon brown sugar, nutmeg, salt, and ginger, mix all these ingredients and pour the mixture over sweet potatoes. Then drizzle olive oil. Bake for 1 hour. For the topping I drizzle honey over top, if you like honey, you should try this step.
