Apple Fritters

Apple Fritters 1 1/4 - cups all purpose flour 1 1/2 teaspoons baking powder 1/4 - cup granulated sugar 1/4 - cup light brown sugar 1 - teaspoon cinnamon 1/3 - 1/2 cup milk 1 - large egg 3 - tablespoons melted butter 1 1/2 cups chopped apples (I prefer golden delicious) In a large bowl, mix all purpose flour, baking powder, both sugars and cinnamon. Add the milk, egg, melted butter and stir to combine. Set mixture aside. Peel and dice the apples and add to batter. Stir the batter just until the apples are moistened; set mixture aside. Heat the oil into a skillet that's at least 1 1/2 inch deep. When the oil is hot drop by cupfuls (about 1/4 cup) for each fritter. A regular ice cream scoop can be used which makes it easier to drop the batter into the oil. Cook until browned about 2 minutes then flip. Cook until both sides are nice and brown. When done transfer to a plate lined with a paper towel. Dust with confectioner’s sugar and serve warm.
