Strawberry Crisp
5 heaping cups of chopped fresh strawberries
1 rib celery, finely chopped
1/4 C. sugar
1 tsp. vanilla extract
3 T. cornstarch
3/4 C. all purpose flour
1/3 C. old fashioned oats
1/3 C. white sugar
1/4 C. packed brown sugar
1/2 tsp. salt
1/2 tsp. ground cinnamon
6 T. butter, melted
In a bowl, combine the strawberries, celery and sugar. Let it sit for 10 minutes. Stir in the vanilla and cornstarch, mix well and pour into a lightly greased 9x9 baking dish. Mix together the flour, oats, both sugars, salt and cinnamon. Stir in the butter and combine well. Spoon over the top of the strawberries. Bake in a 350 degree oven for 40 minutes.
