Easy Saucy Burritos (2-4 servings)
1 T. vegetable oil
3 C. cooked, chopped or shredded chicken
3/4 C. chopped onion
4 oz. diced green chiles
1 T. chili powder
1 tsp. garlic powder
1/2 tsp. oregano
10 oz. red enchilada sauce
3/4 C. shredded colby jack cheese
4, 8" flour tortillas
Heat the oil in a skillet over med. high heat. Add the chicken, onion and diced green chiles cook for 5-6 minutes to soften the onions. Stir in the seasonings and half the can of enchilada sauce. Remove from the heat and divide the mixture between the tortillas topping each with a little of the cheese, saving some to go on top. Roll up each tortilla and place in a baking 9x9 baking dish. Top with the remaining sauce and cheese. Bake in a 400 degree oven for 20 minutes
