Dijon Mustard Chicken Salad
2 cups Sweet Kale Chopped Salad, vegetables only
8 ounces shredded rotisserie chicken breast
1/4 cup sunflower seeds
1/2 avocado, diced
2 Tbs Dijon mustard
1 Tbs olive oil
1 Tbs apple cider vinegar
Garlic powder to taste
Salt & pepper to taste
I’m a large bowl layer kale salad, sunflower seeds and avocado.
In a small bowl toss chicken with Dijon mustard, and garlic powder until well coated. Place chicken on top of salad.
In a separate bowl combine olive oil, vinegar, salt and pepper. Drizzle over salad and enjoy!
