Fiesta Quesadillas
Fiesta Quesadillas
8 flour tortillas
1 cup fresh spinach, chopped
1/2 cup chicken breast, cooked & shredded (rotisserie is great)
1/4 cup corn
1/4 cup black beans, rinsed and drained
4 tbsp. fresh cilantro, chopped
1 lime, juiced
1/2 cup Reduced Fat Mexican Blend Shredded Cheese
4 tbsp. reduced fat sour cream
Preheat a grill pan, or a large skillet, over medium heat
In a large bowl combine spinach, chicken, corn, beans, cilantro & lime juice
Place 3-4 tortillas in pan
Sprinkle with a little cheese
Divide chicken mixture onto each tortilla (about 1/4 cup)
Divide remaining cheese over chicken mixture and then place last of the tortillas on top of the cheese
Let cook, gently pressing down to help get everything heated and for the cheese to melt, for about 3-4 minutes
Gently flip each quesadilla and let cook for an additional 3-4 minutes
Remove from heat and let sit for 2-3 minutes
Cut each quesadilla into quarters and serve with 1 tbsp. of sour cream
