5-Minute Caramel Corn

5-Minute Caramel Corn 6 cups popped popcorn (about 1 microwaveable bag, or 1/4 cup kernels) 2 Tbsp light karo syrup 1/2 cup brown sugar 4 Tbsp salted butter , chopped into small pieces 1/4 tsp baking soda 1/2 tsp vanilla Line a baking sheet with a piece of wax or parchment paper, set aside. Pop the popcorn. Pour into a extra-large bowl and remove any un-popped kernels. Add karo syrup, brown sugar and butter to a microwave safe bowl. Microwave for 30 seconds. Remove and stir well. The butter should be partially melted at this point. Microwave again for 2 minutes. Remove and stir well, again. Return to microwave for 2 more minutes. Remove and stir in baking soda and vanilla. It will bubble and fizz. Pour immediatly over popcorn and stir well to coat evenly. Pour popcorn out onto baking sheet and spread into one layer to cool. Enjoy! For baked, crunchy caramel corn, Bake at 200 degrees F for 45min- 1 hour, stirring every 15 minutes.
