ASIAN-STYLE BEEF NOODLES
1 tablespoon vegetable oil
1 pound lean ground beef
1 green bell pepper, seeded and thinly sliced
4 scallions, trimmed and thinly sliced
2 tablespoons ginger, finely chopped
1 clove garlic, finely chopped
1/4 teaspoon red pepper flakes
1 teaspoon sugar
3 tablespoons stir-fry sauce
3 tablespoons lime juice
8 ounces thin spaghetti or Chinese noodles
Bring a large pot of lightly salted water to a boil.
In large skillet or wok, heat oil over medium-high heat. Add beef to skillet and cook for 6 minutes or until no longer pink.
Add green pepper, scallions, ginger, garlic, red pepper flakes and sugar to skillet. Cook for 5 minutes, stirring occasionally. Turn off heat and stir in stir-fry sauce and lime juice.
While beef is cooking, prepare spaghetti following package directions. Drain and add to skillet with beef mixture. Toss to combine. Yield: 4 servings.
