Fluffy Scrambled Eggs
Butter
Eggs
Milk
Salt & Pepper
Cheese, optional
Heat a small amount of butter in a skillet over medium-high heat, until melted & bubbly.
Add the amount of milk you would typically scramble with the eggs to the pan and wait 5 seconds or so until it sizzles & foams up. (I typically add only a tablespoon or two per 2-3 eggs.)
Add whisked eggs, a sprinkle of cheese, if desired, & season with salt & pepper. Stir with a rubber spatula until eggs are just about done; approximately 2 minutes or less. (If scrambled eggs look done in the pan, they will be overdone on the plate, so cook accordingly.) Remove pan from heat. Serve immediately topped with extra cheese if desired.
