15 MINUTE VEGETABLE LO MEIN
8 oz uncooked stir-fry/lo mein noodles ((spaghetti noodles or thick rice noodles as an alternative))
4 tsp stir-fry oil ((may substitute with more oil))
1 tbsp vegetable oil
1/2 lb colored bell peppers, diced ((I bought stir-fry bell peppers))
8 green onion stalks, diced
8 oz broccoli florets ((I bought stir-fry broccoli florets))
1 cup shredded carrots
6 oz snow peas
Sauce
4 tbsp soy sauce
4 tsp granulated sugar
1 1/2 tbsp honey
1/4 tsp sesame oil
5 garlic cloves, minced (or 2 tsp garlic paste)
1/4 tsp ground ginger (if not using stir-fry oil)
1/2 tsp sesame seeds
Cook noodles in a large saucepan according to package directions, Drain and set aside.
Place broccoli florets in a microwave-safe bowl with 1/2 cup water. Cover top of bowl with a microwave-safe plate. Place in microwave and cook 4 minutes.
Heat oils in a wok or large skillet over medium-high heat. Add in diced bell peppers and white parts of green onions. Stir fry to color; about 3 minutes.
Stir in shredded carrots, and snow peas. Stir fry vegetables until fork-tender; about 7 minutes total.
Whisk together the sauce.
Add lo mein noodles to a large saucepan. Toss with sauce. Add in stir-fried vegetables and steamed broccoli.
Serve with remaining green onions and sesame seeds.
Notes
EASY PREP: I used stir-fry bell peppers and broccoli. Both of these can be found by the fresh produce, pre-packaged.
NOODLE ALTERNATIVES: Head to the ethnic food aisle. Try to find lo mein or thick stir-fry (rice) noodles. Spaghetti noodles or ramen noodles will work, too.
STIR-FRY OIL: I picked up a bottle of Asian stir-fry oil. Typically, this oil is seasoned with garlic and ginger flavorings. Feel free to substitute with vegetable oil. Then, if you have it, simply add a few dashes ground ginger to the sauce.
STIR FRY PARINGS: Asian Baby Back Ribs, Kung Pao Chicken, Asian Garlic Sesame Chicken, Instant Pot Beef and Broccoli, Asian Lettuce Cups, Egg Roll in a Bowl, Vegetable Fried Rice, Orange Chicken, Asian Garlic Sesame Meatballs, Korean Lettuce Wraps, Korean Fried Chicken, Instant Pot Rotisserie Chicken.
