ULTIMATE Mashed Potatoes
5 lb russet potatoes
1 tbsp. salt, divided
3 garlic cloves, minced
16 oz sour cream
1/2 cup butter
1/4 cup skim milk
2 tsp pepper
Fill a large pot, with a lid with water (leaving enough room for potatoes)
Wash, peel and cut potatoes into bite size pieces
Place potatoes into pot filled with water
Add in 1/2 tbsp. salt & minced garlic
Place pot with lid on it over medium heat and bring to a boil
Cook potatoes until they are fork tender
Drain potatoes in colander and place back into large pot
Place potatoes back onto stove for 3-4 minutes to help dry them out
In a large microwave safe bowl melt together butter, sour cream and milk in 30 second increments, stirring often until melted
Pour 1/4 of butter mixture into pot, remaining salt & pepper
Using a hand mixer, or a potato masher for chunkier potatoes, whip until all liquid is absorbed, repeat until all liquid is used and potatoes are smooth, or to your desired consistency
Taste and adjust seasoning as needed
Serve with a little melted butter over the top if desired
