Peach Cobbler Bars
Bars
1 cup butter, softened
1 cup sugar
1 cup brown sugar
4 eggs
2 tsp vanilla
3 cups all purpose flour
1 tsp salt
6 medium peaches, peeled and sliced into thin wedges
1/4 cup brown sugar
1/2 tsp pumpkin pie spice
Glaze
1/2 tsp vanilla extract
1/2 cup powder sugar
1 tbsp. milk
Preheat oven to 350
Line a 15x10x1 with parchment paper (you can use a 9×13 pan but cooking time will need to increase to at least 35 minutes)
In the bowl of a mixer cream together butter and sugars
Add in eggs, one at a time, mixing until well combined after each egg
Add in vanilla extract and beat until well combined
In a medium bowl combine flour & salt
Add flour mixture into butter mixture and beat until well combined
In a large bowl combine peach pie filling & pumpkin pie spice
Spread 3 cups of batter onto prepared pan
Spread pie filling over batter and then drop remaining batter over pie filling
Bake for 25-30 minutes, or until a toothpick comes our clean when inserted into the middle
Cool of a wire rack
In a small bowl combine vanilla, powdered sugar & milk until smooth
Drizzle over bars and let cool completely
Cut to serve
