Red Velvet Brownies
Red Velvet Brownies
Brownies:
1/2 cup butter
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1/4 tsp salt
2 tbsp. vanilla extract, divided
3 tbsp. cocoa powder
2 tbsp. red food coloring
1 1/4 cups flour
2/3 cup chocolate chips
Icing:
8 tbsp. butter, softened
2 cups powder sugar
1 tsp vanilla extract
4 oz white chocolate, melted
2 tbsp. milk
Preheat oven to 350
Line a 9x13 baking pan with parchment paper, or spray with nonstick spray
In the bowl of an electric mixer cream together butter and sugars until fluffy
Add eggs one at a time, scraping down the sides as necessary
Add in 1 tbsp. vanilla and salt, mixing until smooth
In a small bowl combine remaining 1 tbsp. vanilla, cocoa and red food coloring forming a paste
Add cocoa paste to the batter and mix until batter is red and smooth
Add in flour until completely combined
Fold in chocolate chips
Spread into prepared pan and cook for 20-25 minutes, or until a toothpick inserted in the center comes out clean
Remove from oven and let cool completely before icing
To make the icing
In the bowl of an electric mixer cream together butter and 1 cup of the powdered sugar
Add in vanilla and melted white chocolate and mix until smooth
Add in remaining powder sugar 1/4 cup at a time and 1 tbsp. of milk at a time or until desired consistency is reached
Spread over brownies and serve
