LOADED PEPITA GRANOLA
6 cups rolled oats
1 cup raw pepitas
1 cup unsalted sunflower seeds
1 1/2 cups whole, raw almonds
1 cup unsweetened coconut flakes
3 tablespoons sesame seeds
for the flavor mixture--
1/2 cup butter
1/4 cup real maple syrup
1/3 cup packed brown sugar
1/2 tablespoon vanilla
1 tablespoon ground cinnamon
1/2 tablespoon nutmeg
1 teaspoon cloves
pinch salt
Preheat oven to 250 degrees. Line 2 rimmed baking sheets with parchment paper and set aside.
Place all dry ingredients into a large bowl and stir.
Melt butter, maple syrup and brown sugar together in a small bowl in the microwave, about 1 minute. Stir in vanilla, and spices. Pour entire contents over dry ingredients in bowl. Stir to coat evenly and spread evenly between 2 baking sheets. Bake 1 hour or until very golden brown. Remove from oven, cool completely, then store in air tight containers for up to 2 weeks...that is if it lasts that long.
